In preparation for my little SJ’s 1st birthday, I have been in party planning mode for weeks. And of course, Pinterest has been my go-to website for exciting ideas (more to come on the party). In my hunt for ideas, i came across these colourful rainbow cupcakes and decided to give it a go…

Recipe: (this is my own cake recipe and makes 12-16 cupcakes)
Ingredients:
  • 125g softened butter
  • 280ml white sugar
  • 3 large eggs
  • 470ml cake flour
  • 21ml baking powder
  • 2,5ml salt
  • 5ml vanilla essence
  • 85ml milk
  • 50ml water
  • 6 food colouring powders
Icing:
  • 500g icing sugar
  • 125g softened butter
  • 2 tsp boiling water

Method:
  • Pre-heat oven to 170’C
  • Cream the butter and sugar together until light and creamy.
  • Add the eggs one at a time beating well after each addition.
  • Sift together the flour, baking powder and salt.
  • Add this to the creamed mixture alternating with the liquids.
  • Mix with a whisk.
  • Separate into different bowls, add colouring powder and mix well.
  • Spoon into paper baking cups, one colour at a time.
  • Bake in the over for 25 minutes.
  • Remove and allow to cool, and then ice and add sprinkles.

This was my first time making these cupcakes, my tester round for SJ’s party next weekend and they turned out great! I can’t wait to make more and get our special friends to taste them…

  1. It looks like it turned out great. But I just can't get myself to eat anything that are so many different colours, I think I'm just a bit too picky.

    Hope they tasted great! And good luck with the second baking session.
